Braised Pork over Rice

Ingredients for braised pork over rice:
- Meat
- Pork belly – 2 lb (diced)
- Pork shoulder – 2 lb (diced)
- Minced pork (alternative) – 4 lb
- Shallots – 6 (chopped)
- Garlic – 3 cloves (chopped)
- Cane sugar – 1 Tbsp
- Ginger – 1 tsp (minced)
- Sauce
- Soy sauce – 3/4 cup
- Five-spice – 1/4 tsp
- Rice wine – 1/4 cup
- Star anise – 2 whole
- Cinnamon – 1 stick
- Pepper – 1 tsp
- Fried shallots – 1 cup
- Water – 3-4 cups
Instructions:
Oven Method
- Preheat oven to 300F
- Blanch the diced pork (2 minutes)
- Heat sugar and oil and saute with pork (10 minutes)
- Add the shallots and garlic (5 minutes)
- Add soy sauce, five-spice, rice wine, star anise, cinnamon and pepper (10 minutes)
- Add in fried shallots and water
- Bake for 2.5 hours at 300F
- Move to the stovetop and boil on medium for 30 minutes
- Serve over rice. Top with green onions
Stovetop Method
- Fry minced pork, shallots, and garlic
- Add soy sauce, five-spice, rice wine, star anise, cinnamon, and pepper (10 minutes)
- Add in fried shallots, water, and hard-boiled eggs.
- Cover on medium heat (20 minutes)
- Add a dash of cooking wine (5 minutes)
- Serve over rice
