This easy homemade Cream of Mushroom Soup is so comforting, creamy and full of fresh mushrooms. Ready in under 60 minutes!

Ingredients:

Instructions:

  1. Soak the dried mushrooms in 5 cups hot water until soft (15 minutes)
  2. Add butter to pot and medium saute onions, garlic and herbs (5 minutes)
  3. Add mushrooms, salt and pepper and saute on medium-high (20 minutes)
  4. Add sherry, chicken stock and mushroom soaking liquid. Bring to boil then simmer (20 minutes)
  5. Puree the mushrooms and salt to taste.
