Cream of Mushroom Soup

This easy homemade Cream of Mushroom Soup is so comforting, creamy and full of fresh mushrooms. Ready in under 60 minutes!

Ingredients:
- Butter – 1/2 stick
- Thyme – 1 sprig
- Shallots – 4 (chopped)
- Garlic – 1 Tablespoon (minced)
- Salt and Pepper –
- Fresh shiitake mushrooms – 1 lb
- Dried cremini mushrooms – 1 oz
- Dried chanterelles – 1 oz
- Chicken stock – 4 cups
- Mushroom soaked liquid – 1 cup
- Cream – 1 1/2 cup
- Sherry – 1/2 cup
Instructions:
- Soak the dried mushrooms in 5 cups hot water until soft (15 minutes)
- Add butter to pot and medium saute onions, garlic and herbs (5 minutes)
- Add mushrooms, salt and pepper and saute on medium-high (20 minutes)
- Add sherry, chicken stock and mushroom soaking liquid. Bring to boil then simmer (20 minutes)
- Puree the mushrooms and salt to taste.
